Good food (or "spiza" as the locals say) is
an integral part of the Hvar tradition. Healthy, light, mostly boiled
food (chiefly fish), seasoned with home-made olive oil and a pinch of
herbs which grow wild everywhere, helped down with good wine - this is
why the people of Hvar are so healthy and long-lived!
What to eat:
Hvar restaurants offer a wide choice of dishes, from the typical
tourist menus to a variety of local specialities. As you are here, we
urge you to taste some of the local specialities:
- goat's cheese in olive oil
- very healthy and tasty wild cabbage
- wild cabbage salad
- "Gregada" - a typical Hvar dish of several kinds of fish,
boiled with potatoes
- "Pečica na tečicu" - fresh goat's cheese fried
with sugar
- "Rožada" - a juicy egg and milk pudding
- home-made "prošek" (similar to sherry) - for better
circulation
Here is a more accessible Hvar menu: "Dalmatinska
garnitura" (Dalmatian platter):
- octopus salad
- fish soup with rice
- baked brass with boiled Swiss chard and potatoes, or mashed potatoes
with onion
- green or mixed salad
- "Paradižet" or peach in red wine
- white wine
Two recipes:
Seafood risotto (serves four)
Fry one kilogramme of seafood (scampi, date shells, cleaned mussels,
shrimps, limpets etc., depending on availability and taste) in olive
oil with parsley and garlic. Add some good quality white wine. Just
before the end, add chopped tomatoes. Add rice (a handful per person)
and cook until tender. Just before serving, sprinkle with a pinch of
marjoram and chopped parsley.
Hvar "Gregada" (serves
four)
Prepare one kilogramme of good quality fish of various kinds, four
potatoes, four onions, one bulb of garlic and a bunch of parsley. Cut
everything in big chunks and put in a large pan in layers. Add salt,
pepper, 100 ml olive oil and just enough water to cover the fish.
Simmer until the potatoes are tender.
