DINNER at BAMBOO
P U P U S
CHICKEN SATE POT STICKERS
The Bamboo specialty! Thai seasoned chicken, herbs, and
peanuts, hand-wrapped by Aunty Mary in won ton pi, steamed, and served with
our famous sweet chili mint sauce.
MARGARITAVILLE PRAWNS
We've taken the booze from the blender and created a
concoction of our own: herb grilled shrimp and fresh papaya, drizzled with a
spicy tequila lime sauce.
KALUA PORK QUESADILLA
Tender, smoked pork from the imu and jalapeno jack cheese
tucked in a grilled flour tortilla, topped with tropical fresh fruit salsa and
sour cream. (We make a Vegetarian version, too!)
SEARED POKI
A Hawaiian favorite: Shoyu marinated fresh fish,
lightly pan seared and laid over a bed of fresh cabbage, vine ripe tomato, and
Maui onion, tossed in a sesame ginger vinaigrette.
KOHALA KOPITA
Maya, our chef, went to Greece on holiday and this is the
result! Sauteed fresh arugula, feta cheese, Maui onions and macadamia nuts
baked in a light filo pastry. (Vegetarian)
CALAMARI STRIPS
Panko coated calamari fried golden brown and served with
your choice of cocktail sauce or pineapple pickled ginger tartar sauce.

A sampling of our most popular appetizers all on one
platter: Pot Stickers, Margaritaville Prawns, and Kalua Pork Quesadilla.

THE BAMBOO SALAD
A blend of Kohala grown greens garnished with fresh Maui
onion, ripe tomato, cucumber, feta cheese and spicy macadamia nuts.
THE BAMBOO NUI
Great for those warm Kohala nights, a dinner-sized portion
of our Bamboo salad, topped with an herbed grilled fillet of fresh Island
fish.
THE CAESAR MACNUT
A classic Caesar salad with a Big Island twist - tossed
with Kohala grown macadamia nuts, garlic croutons, and grated Parmesan cheese.
And our homemade soups are pretty terrific…

All "mountain" entrees come with fresh
vegetables and your choice of rice or potato. Most are available in petite
portions.
PINEAPPLE BARBECUED CHICKEN
One half chicken, grilled with our homemade roasted
pineapple barbecue sauce, accompanied by a fresh fruit relish.
PUA'A A OPAI
Herb marinated pork tenderloin and black tiger shrimp,
flame-broiled and nestled on a green papaya salad, then finished with roasted
pineapple barbeque sauce.
BEEF TENDERLOIN
A thickly cut center filet of tender beef, grilled to your
taste and finished with our own Tipsy sauce made with Jack Daniels and Maui
Onions.
CHARGRILLED RIBEYE STEAK
A twelve ounce cut of tender ribeye, seasoned, and grilled
to your liking. Complimented with a slice of grilled Maui onion.

At Bamboo, we pride ourselves in using only the freshest
fish available from local waters, caught by fishermen often from our own
Kohala community. Choose from one of the following preparations or try our
chef's daily special. All fish is at market price and is available in petite
portions.
HAWAII THAI
Herb grilled & basted with a bouquet of Thai flavors:
coconut milk, ginger, lemongrass, and sweet chili, then textured with fresh
bean sprouts, cilantro, and peanuts.
MARGARITAVILLE
Pan sauteed and nestled on a bed of fresh Kohala greens,
smothered with our famous margarita sauce, and garnished with sweet papaya
relish.
MACADAMIA NUT CRUSTED
Crusted with macadamia nuts and lightly pan fried, then
laid atop a bed of fresh arugula, and drizzled with our kiawe-smoked tomato
vinaigrette.
CRISPY POLENTA
Maya has made a crispy goat cheese polenta, laid it atop a
bed of Kohala greens…then she lightly grills your fresh fish and tops it
with a roasted red pepper and Thai basil sauce.

THE HAWAIIAN HULA
A light coconut and saffron broth with fresh shrimp and
fish of the day, along with whatever other fresh seafood is available from our
island waters.
SESAME-NORI CRUSTED SHRIMP
Large, black tiger prawns in a crispy panko and furakaki
crust, served on a bed of shredded cabbage, with our homemade horseradish and
sambal cocktail sauce, with sauteed vegetable and your choice of rice or
potato.
SHRIMP ALFREDO
Garlic and herb grilled shrimp on a heaping plate of
fettucini tossed in a garlic and Parmesan cream sauce and garnished with diced
tomato and green onion.
"DA LOCAL STYLE"
PACIFIC STIR-FRIED NOODLES
Fresh vegetables and noodles tossed in your choice of
traditional Asian teriyaki sauce or Thai coconut sauce. Choose chicken,
shrimp, or vegetarian.
KALUA PORK & CABBAGE
There's no Hawaiian party without it: Luau style pork,
smoked in our own imu, accompanied by fresh cabbage and "two scoop"
rice.
TERIYAKI CHICKEN
Always a local favorite, grilled, marinated chicken served
with cole slaw and steamed rice.

BUTTERED NOODLES
Just what it says! Ask if you want parmesan cheese.
THE BAMBOO BURGER
A six ounce chargrilled beef patty on a sesame seed bun

A kid-sized portion of grilled teriyaki chicken served with
