Served at noontime Monday through Friday only, excluding holidays.

Pressed green bean and pig's feet salad, fried Mediterranean prawns, shellfish vinaigrette .
oR Asparagus salad with oyster bouquet, quick-cooked escalope of salmon (served warm), tomato, truffle-scented vinaigrette.

Crispy basil mille feuilles, roasted angler medallion, Pitchounes olive sauce, petits gris and sun-dried tomato.
oR Open-faced chanterelle ravioli, veal scallop and foie gras, poultry-chanterelle bouillon.

Grilled filet of mullet, small tomatoes stuffed with young vegetables and shellfish, sorrel salad.

Roasted turbot filet (or bass filet, depending on market availability), served over a cuttlefish fricassee, mangetout peas and chard.

Filet of roast duck on the bone, crispy stewed duck leg, golden applesauce, glaze, meadow mushroom fricassee.

Fine cheeses.

Served to entire table only.

Cold white bean soup Niçois, sautéed chanterelle mushrooms, langoustine crisp, olive oil.

lobster slice with chicken oyster, corn ravioli, vanilla scented olive oil.

sautéed escalope of duck liver (foie gras), gingerbread and candied lemon fan, Banyols syrup.

Rolled and roasted filet of sole, spring zucchini and Thau Basin shellfish, herb oil, flower fritter.

Roast pigeon filet, curried giblets en pastilla, buttered pear, bitter cocoa sauce.
